This week, Netflix’s Selling Sunset star Emma Leigh Hernan launches a frozen vegan empanada brand using Beyond Meat. Headquartered in Boston, Emma Leigh & Co—the plant-based frozen food company—offers two vegan empanada options, both of which feature Beyond Meat vegan crumbles. Hernan, an actress, model, and entrepreneur, also happens to be a third-generation food manufacturer.

“Growing up in the food industry, I always envisioned having my own food line. As I became more aware of the wide array of benefits of plant based foods, it made sense for me to combine some of my favorite recipes with plant-based ingredients, and that is the foundation for Emma Leigh & Co,” Hernan told VegOut. “I am proud to offer my delicious plant-based items to the world and to keep developing amazing products.”

Making a Positive Impact on Health and Wellness

After experimenting with recipes at home in California, Hernan was inspired to start her own food brand as a way to make plant-based frozen products more accessible, while also making a positive impact on health and wellness.

“For years I have been experimenting with recipes in the kitchen, where I love cooking for my family and friends. I am so grateful that I now get to make my nutritious food options with delicious and satiating plant-based meat from Beyond Meat,” Hernan told VegOut. “This is only the beginning as I am continuing to develop new amazing plant-based products that will be coming out later this year.”

Frozen Vegan Empanadas

The frozen vegan empanadas are available in Mini Beef and Sausage Pizza varieties. Each is stuffed with Beyond Beef plant-based crumbles, a pea- and rice-based product that is designed to deliver the juicy, meaty taste and texture of beef.

Emma Leigh & Co vegan empanadas are available at Market Basket, Roche Bros, Shaw’s Supermarket, Stew Leonard’s, and select Costco locations. The vegan empanadas will also be available soon online at EmmaLeighCo.com. In addition, the company plans to add their products to more store shelves nationwide this year.
