Goofy’s Kitchen at Disneyland Hotel Offers 50% Plant-Based Menu

In addition to the park offerings, the Goofy’s Kitchen restaurant located in the Disneyland Hotel offers a 50% plant-based menu for the holidays. Some of the limited-edition vegan options include Japanese Sweet Potato Hash, Apple & Cranberry Stuffing, Roasted Brussels with Fennel & Figs, Corn Cake Brûlée, Roasted Beet & Pear Salad, and Brazilian-Style Roasted Pineapple.

This plant-based spread at Goofy’s Kitchen is a part of Disneyland’s Sustainable Culinary Fellowship program, focused on creating sustainable menus throughout the resort. Chef Kameron Trevino, one of the chefs participating in the program stated, “I came into the fellowship with an open mind and the more I learned about sustainability in the food chain I realized that we have an opportunity to make a significant impact. And, you know what? The food doesn’t have to be boring or the same old, same old. We’re Disney! We can innovate like we always do.”

Trevino expressed a desire not only to craft sustainable dishes but dishes that also cater to people with different dietary needs beyond a standard side of vegetables. And these new menu items are a hit! “Oftentimes, you’ll see one or two pieces of protein on guests’ plate, but a whole heck of a lot of broccoli or the Japanese sweet potato hash and people going for seconds and thirds of the pineapple. The corn cake really goes like hotcakes. We run out of that every night and that was an ‘aha’ moment, for me where I realized this is working. The learnings that we have had this past year are coming into fruition and are in full effect here at Goofy’s Kitchen,” Trevino told VegOut.
