Nike athlete and vegan chef Tabay Atkins opens his first vegan food truck! This new vegan hot spot is Tabay’s Mindful Kitchen. It features a bold lineup of vegan comfort favorites. The plant-based food truck will offer a plethora of options. These include everything from milkshakes and salads to pho! The truck will be your go-to spot for summer.

Tabay Atkins is making it easier to access our favorite vegan foods. You’ll have endless options at his new vegan food truck, Tabay’s Mindful Kitchen. These droolworthy options include Human Style Fries (a vegan twist on In-N-Out’s animal fries), chick’n & waffles, f’sh sandwiches, hot dogs, tacos, and more. The food truck also has a sweet selection of dessert favorites such as vegan soft serve, milkshakes, and smoothies! And don’t worry, Atkins takes care of whole food vegans with his Mindful Menu. This special selection is filled with recipes made from scratch and prepared with organic ingredients. And to top it off—Atkins will offer an all-day breakfast menu!
The new vegan spot is covering all bases and already attracting all types of foodies. “Most of our customers are not vegan—we’ve only had a handful of vegan customers. The rest are, and I quote, ‘far from being vegan.’ And the best part is that they love the food and admit that they cannot tell the difference,” Atkins shared with VegOut.

By offering plant-based versions of everything we can imagine, Tabay’s Mindful Kitchen is on a mission to make your plant-based transition stress-free! “I want to give my community delicious vegan food. Good food is good food. When someone orders from my vegan food truck, that is one non-vegan meal they are not eating elsewhere.” Atkin shared.
