But after years of traveling for work and pleasure, I've discovered that some of the most exciting plant-based eating happens in places that rarely make the "best vegan cities" lists.

These eight cities have surprised me with their creativity, accessibility, and sheer deliciousness. Some have deep cultural traditions that naturally embrace plant-based eating. Others are experiencing a renaissance driven by passionate chefs and changing demographics.

Tel Aviv might just be the vegan capital of the world, and most Americans have no idea. With roughly 5% of the population identifying as vegan, the city has developed an infrastructure that makes plant-based living effortless.
