Instructions
- Prepare the filling. Heat sesame oil in a skillet. Add tofu strips, mushrooms, and soy sauce; sauté 5–6 minutes until lightly browned. Remove from heat.
- Assemble your veggies. Arrange cabbage, carrots, green onions, herbs, and bean sprouts in small bowls for easy rolling.
- Soften wrappers. Fill a shallow dish with warm water. Dip one rice paper wrapper for 5–7 seconds, just until pliable.
- Fill. Place softened wrapper on a clean surface. Add 2–3 tbsp filling: cabbage, carrots, sautéed tofu mix, herbs.
- Roll. Fold the bottom over filling, tuck in sides, and roll tightly. Repeat with remaining wrappers.
- Bake or air-fry. Preheat the oven to 400°F (200°C) or air fryer to 375°F. Arrange rolls on parchment-lined sheet. Lightly spray with oil. Bake/air-fry 15–18 minutes, flipping halfway, until golden and crispy.
- Make dipping sauce. In a small bowl, whisk peanut butter, lime juice, soy sauce, maple syrup, ginger, and garlic. Add water gradually until smooth and pourable.
