The Plot in Oceanside
Husband-and-wife duo Davin and Jessica Waite own a variety of Southern California restaurants including The Plot in Oceanside. The fully plant-based eatery opened in January 2020 as a dream come true for the eco-conscious couple. Over the past few years, The Plot flourished, winning a variety of awards—including San Diego Magazine’s “Best New Restaurant of the Year.”
Eco-Friendly Shopping Center
The Plot’s new vegan restaurant in Costa Mesa opens in The CAMP, an eco-friendly shopping center that hosts a plethora of sustainable businesses offering food, drinks, goods, and services.
“We are so excited to be a part of The CAMP Costa Mesa community! We connected with them last summer and really felt an alignment with the space and the other businesses in the area. We have always planned to expand and are also building out an express location in Carlsbad right now. Costa Mesa just felt like a great next step for us; so many of our guests at The Plot Oceanside drive from OC, and we really love spending time up there,” shared Jessica.
Vegan Menu at The Plot Costa Mesa
The Plot’s new location in Costa Mesa offers a similar menu to the Oceanside location, with a slightly larger lunch menu. Everything is made from scratch using regeneratively grown produce, aside from the organic tofu which is sourced locally.
In lieu of processed plant-based meats and cheese, The Plot gets creative with ingredients like squash, lentils, cashews, and mushrooms. The result? One-of-a-kind plant-based dishes like Chickën and Waffles, Okinawan Sweet Potato Gnocchi, and Smoky Summer Surf & Turf sushi rolls. Another fan-favorite is the Takoyaki, a Japanese appetizer made from lion’s mane, trumpet, and oyster mushrooms in the style of minced octopus. Other items on the vegan menu at The Plot Costa Mesa include kombucha, craft beer, natural wines, and non-alcoholic cocktails.
Zero-Waste Regenerative Restaurant
There are many reasons The Plot stands out. For starters, the establishment serves mindblowing culinary masterpieces that happen to be plant-based. In addition, the decor and space makes for a great environment for everything from work meetings and first dates to family gatherings and celebrations. And last but not least, The Plot goes beyond sustainability to create a zero-waste regenerative restaurant.
How does The Plot practice sustainability? They use produce from their garden when possible, source additional ingredients from regenerative farms, and make products in-house to minimize packaging and supply chain footprint. All food waste is repurposed, aside from romaine stems, which go to the Waite’s pet giant tortoise, Winston Churchill. Lastly, The Plot features recycled decor, zero-waste candles, and biodegradable packaging. So now does it make sense that the restaurant was awarded the 2022 Outstanding Waste Prevention Award from the California Resource Recovery Association?
Jessica told VegOut, “We believe in the food we are serving and want to amplify our mission by reaching more people. We really want to help bring plant-forward eating mainstream. It's so good for people and the environment. We also love building relationships and partnerships, and it's super fun to be going into a new space with so many cool local businesses.”
