Vegan Sushi Concept by Chef Niko Zaragoza

Niku Nashi opened earlier this year as a vegan sushi concept by Chef Niko Zaragoza. Their food first debuted inside the vegan cocktail bar APB. The business also operates the outdoor patio as a standalone restaurant.

Last week, Niku Nashi debuted the patio on N Poinsettia Pl off of Melrose Ave for daily al fresco dining. In addition, they’ve expanded their to-go offerings and full menu to include delivery, with DoorDash, Postmates, Grubhub and Uber Eats, in addition to catering.

Niku Nashi’s Plant-Based Japanese Menu

Niku Nashi’s menu features the best of the best in vegan Japanese fare. Among the appetizers, you’ll find Edamame with Truffle Salt, Veracruz Jalapeño Poppers, and Gyoza. But whatever you do, you must try the fan-favorite Ceviche Tacos—marinated vegan tuna, cucumber, red onion, jalapeno, cilantro, and tomato served in a dumpling taco shell topped with avocado and vegan caviar.

The star of the show on Niku Nashi’s plant-based Japanese menu is their sushi! They craft a wide variety of vegan maki, nigiri, and sashimi using ingredients like organic mushrooms, eggplant, and a wickedly realistic “No Tuna” made from the Asian root vegetable konjac. Most recently, Niku Nashi expanded their hand roll portfolio to include Spicy No Tuna, No Crab, Veggie, Mushroom Tempura, and Shrimp Tempura. Best of all, these hand rolls are priced affordably, ranging from $6 to $12!

For the ultimate foodie lunch, customers can order a vegan sushi boat. Because who could pass up the opportunity to experience a small wooden boat filled with a 54-piece assortment of cut rolls, sashimi, and appetizers?

The last honorable mention of Niku Nashi’s dine-in menu? The desserts, of course! Go the classic Japanese dessert route and order mochi made by Mochidoki. Or indulge in a classic Chocolate Cheesecake, made by Jennifer Pennifer Bakes.

Vegan Japanese Bento Boxes

Niku Nashi’s pickup and delivery menu is the same as their dine-in offerings at APB. The major difference is the bento box, which is available for to-go, delivery, and catering orders at a cost of $35. It is essentially a smaller takeout-friendly version of the sushi boat sampler, suitable for one person. The vegan Japanese bento box contains Spicy Garlic Edamame, 5-piece No Tuna Sashimi, 4-piece Spicy No Tuna Roll, 4-piece Philadelphia Maki, and a Nigiri Assortment. The bites are accompanied by Smoked Carrot Salmon, Cream Cheese, Eel Sauce, Black Garlic, and Avocado.
