Celebrate August 11-13 with Queer-owned Thistle’s Summit as they open their doors in Des Moines.

Iowa is getting an upgrade! Thistle’s Summit is a gluten-free, vegan bakery that will hold its grand opening this weekend in Des Moines.

Gluten-Free, Vegan Bakery Opens in Des Moines

Thistle’s Summit is a gluten-free, vegan bakery. The business will open the doors to its first brick-and-mortar shop this weekend, August 11-13. Before this opening, owner Marti Payseur was baking in a shared kitchen in the Drake neighborhood. Thistle’s Summit is already stocked in 10 different retailers across the metro area. But, this will mark the first time that Payseur will bake and sell her baked goods in the same place.

The shop will feature some of Payseur’s most popular recipes, including her famed Oatmeal Cream Pies. Other favorites include Tahini Chocolate Chip Cookies, Sugar Mama Cookie Sandwiches, and Cinnamon Rolls. Everything is vegan and gluten-free, of course!

The new shop is located at 340 SW 5th Street #122, Des Moines, Iowa 50309. To start, the shop will be open Thursday through Sunday from 8am-2pm. Alongside Payseur’s homemade treats, the shop will stock a large selection of vegan and gluten-free snacks, sauces, and pastries.

The grand opening will be held from August 11-13, from 8am-2pm each day. Customers will enjoy prize basket giveaways, mini astrology readings, and complimentary champagne and iced tea while they shop.

A Queer-Friendly Space in Des Moines

But Thistle’s Summit is more than just a vegan bakery. While Payseur’s bakery will run out of the downstairs area of the building, Payseur’s life and business partner Ash Bruxvoort will run a modern apothecary in the loft.

Ash will offer hypnotherapy and private astrology readings in the loft during the hours that the bakery is closed. And when the bakery is open, customers will be able to shop a curated selection of crystals, candles, and tarot decks. And, as both Payseur and Bruxvoort are Queer, many of these are sourced by Queer makers.

“This new space is the embodiment of years of hard work and finding our way as two Queer business owners who wanted to do what we love and also provide a space for Queer people to be in community,” said Payseur.
