Barrio Logan Vegan Food Popup is happening this Saturday, July 22.
The Vegan Food Popup returns to Barrio Logan this week, and San Diegans will have a chance to indulge in their favorite traditional Mexican dishes, vegan style. This event brings in vendors who specialize in vegan versions of classic recipes, providing a unique culinary experience that celebrates both heritage and ethical values.
Maribel y Oliva Cocina: A Taste of Mexico
One of the featured vendors at the Vegan Food Popup is Maribel y Oliva Cocina, an Encinitas-based vendor known for their rotating, seasonal menu inspired by a rich food heritage. Their most popular dish, sopes, offers a delightful twist on the traditional tortilla. Hand-pressed to order, these soft and thick tortillas are filled with a variety of scratch-made toppings, including soy-based chorizo and a drizzle of cashew-based crema. Co-owner Diana Zamora draws inspiration from her family’s recipes, ensuring that each dish stays true to its roots.
Phatties Food Truck and Restaurant: Reimagining the Classics
Olga Saldivar, co-owner of Phatties Food Truck and Phatties Restaurant in Escondido, believes that reimagined classic dishes provide a way for people to enjoy the foods they grew up with while also addressing concerns for the environment and animal welfare. Their menu offers a range of compassionate and sustainable options, including their famous adobada fries. Loaded with plant-based meat and cheese, topped with pico de gallo, avocado, and dairy-free chipotle crema, these fries capture the essence of beloved Mexican flavors without compromising on ethics.
According to Saldivar, “It’s important to have vegan options available to the community because they empower individuals to make conscious choices that align with their values, fostering inclusivity, environmental stewardship, and compassion towards all living beings.”
