Alex Vargas, cofounder and head chef of the vegan Mexican pop-up Vegatinos, is opening a brick-and-mortar restaurant in Van Nuys! If you’ve had the pleasure of trying one of the authentic Mexican meals from Vegatinos, then you already know how exciting this news is! Vargas masterfully veganizes his Mom’s and Grandma’s authentic recipes all the way from Jalisco, Mexico.
After serving his flavorful plates in the pop-up scene, Vargas is now opening a brick-and-mortar in Van Nuys. He made the decision to open El Cocinero Restaurant in Van Nuys due to a lack of healthy options in the area. “We have fast food restaurants and liquor stores on every corner, but not healthy and vegan options. At El Cocinero Restaurant, we offer authentic 100% vegan Mexican dishes. We will be the first 100% Mexican vegan restaurant in the San Fernando Valley and offer a variety of authentic Mexican dishes,” shared Vargas.
Starting this Wednesday, June 24th, you can stop by El Cocinero Restaurant to enjoy Vargas’s Vegan Chicharrón Tacos, Jackfruit Pozole, Tacos, Burritos, Loaded Fries, Flan, and more!
