The University of Texas reaches a major milestone with half of all meals served being plant-based.
In a groundbreaking move for sustainable campus dining, the University of Texas at Austin has achieved a significant milestone by fulfilling the Forward Food pledge in collaboration with the Humane Society of the United States. This achievement marks UT Austin as the first institution in the nation to offer 50% plant-based meals on campus, showcasing a commitment to environmental stewardship and ethical dining.
Chef J. Keith Morrison, director of culinary for UT Austin, highlights the university’s dedication to sustainable and ethical food practices. Morrison said, “After joining the Menus of Change collaborative in 2020, we aligned our goals with the initiative by focusing on expanding our offering of healthy, nutritious, sustainable and plant-based entree options. These goals are directly in line with the Humane Society’s pledge marking our commitment to offer 50% plant-based meals by 2025. As an institution of higher education, we take pride in our efforts to drive change for a better, healthier tomorrow on campuses across the country in collaboration with The Menus of Change University Research Collaborative, the National Association of College and University Food Services, the HSUS and other partners.”
Celebratory Event Held at Campus Dining Hall
A celebratory event showcased the diverse and delicious plant-based offerings now available on campus. Attendees, including UT Austin staff, Humane Society representatives, and members of the campus community, enjoyed a variety of innovative plant-based recipes, with plant-based tacos stealing the spotlight.
Students expressed enthusiasm for the collaboration and the expanded range of food options at UT Austin. Cecilia Raatz, sustainability coordinator for UT Austin’s Housing and Dining department, shared, “Witnessing students’ positive reactions to the plant-based taco sampling at the event was incredibly gratifying; it reinforced our commitment to continuing to expand our plant-based offerings.”
Meeting Student Needs and Preferences
UT Austin’s commitment to inclusivity and availability ensures that all students, regardless of dietary preferences, have access to satisfying and nutritious meals. UT Austin freshman Morgan Lenamond said, “It’s so nice to always know that there is always going to be an option for me in the dining hall which isn’t always the case in other places, off campus, like restaurants!”
