Jessica and Davin Waite, the dynamic duo behind the acclaimed plant-based restaurant, The Plot, have unveiled their latest location in the heart of Orange County. Nestled within Costa Mesa’s eco-friendly retail space, The CAMP, the couple introduced their third location on January 5.

“We’re thrilled to open our third location at The CAMP,” said Jessica Waite, owner and co-founder of The Plot. “We’ve always wanted to expand our reach and bring our plant-based cuisine to more people, and The CAMP’s commitment to sustainability and community aligns perfectly with our values. We’re excited to be a part of such a vibrant and innovative space that champions sustainability as not just a trend, but a way of life.”

Commitment to Sustainability and Community

The Plot’s journey began in South Oceanside in January 2020, with a mission to revolutionize San Diego County’s culinary landscape. The restaurant’s zero-waste ethos and inventive plant-based offerings quickly earned it accolades, including “Best New Restaurant of the Year” by San Diego Magazine in 2020.

As demand for plant-forward eating surges, Jessica and Davin remain pioneers in Southern California’s food movement. Their dedication extends beyond the kitchen, with Davin receiving the 2022 California Travel Association Sustainability Advocate Award.

The Plot’s menu features locally sourced produce, including ingredients from their regenerative Plot Garden in Oceanside. The culinary team, led by chefs Davin Waite and Travis Roe, crafts plant-based proteins in-house, including Davin’s lion’s mane mushroom-based imitation crab.

Jessica and Davin aim to transcend sustainability, aspiring to become a regenerative business. Their vision includes restoring green spaces, supporting like-minded farmers, and educating communities about the benefits of a localized food system.

The Plot’s Menu

The Plot’s menu defies expectations, showcasing items like Chickën and Waffles with habanero shallot sauce, Shepherd’s Pie made from locally grown ingredients, and the indulgent Beet Reuben. The culinary team’s commitment to total utilization minimizes waste, setting them apart from industry norms.

“We set out to create a restaurant brand that aligned with everything we believe in; basically, idealistic AF,” said Jessica. “We believe that every time someone has a meal, they should experience something that spurs conversations, builds community, supports and uplifts the local farmers and economy, creates sustainability, and sets their soul on fire.”
