Rubio’s Adds Impossible Meat to Menu
What a year to be vegan! Rubio’s, the popular Mexican food chain will be bringing Impossible meat to all of its California, Nevada, and Arizona locations starting January 6th. The plant-based meat substitute will be seasoned and marinated in Rubio’s own signature blend of spices, so guests can be sure they’re getting the flavors they love.

The Impossible meat will be featured on three different menu items: Impossible Taco Salad, Impossible Burrito Especial, and Impossible California Bowl. All three items are vegetarian by default, and can be made vegan by omitting the dairy-based sauces. Alternatively, guests can also swap out chicken or steak for the plant-based meat on any menu item, which is an excellent option for those looking to lower their meat consumption while still experiencing the flavors and protein they’re accustomed to.
