A new vegan restaurant is serving up plant-based bites in Newark, NJ. Last week, Newark native Adenah Bayoh opened Urban Vegan, an all-vegan eatery that offers affordable meals made with locally sourced ingredients. The intent behind Bayoh’s new restaurant is to bring more job opportunities to the community, as well as to provide healthier dining options.

Urban Vegan’s Plant-Based Comfort Food

Flaky, scratch-made vegan biscuits and burgers with fresh toppings are all the rave at Urban Vegan. The menu features plant-based comfort food dishes developed by Urban Vegan Creative Director and Culinary Designer, Emeka Onugha, and includes everything from pulled BBQ biscuits (pulled oats, Carolina BBQ sauce, pickles, ranch, and coleslaw) to California burgers topped with cheese, fresh salsa, avocado, cilantro lime sauce, and lettuce. Guests can also pair their burgers and biscuit sandwiches with sides like sweet potato fries, plantains, cole slaw, and cucumber avocado salad. In addition, those looking for lighter fare can opt for black rice or quinoa bowls, salads, and fruit shakes.

Creating Job Opportunities for the Local Community

Urban Vegan isn’t Bayoh’s first endeavor in the restaurant scene. With the goal of creating job opportunities for the local community, the restaurateur began her career by purchasing an abandoned diner in Irvington, New Jersey in the mid-2000s, which she then turned into an IHOP restaurant. After much success, Bayoh opened two more IHOP locations in both Paterson and Newark, New Jersey, which in turn created up to 40 living-wage jobs for residents in the area. Bayoh is also the mind behind Cornbread Soul, a fast-casual farm-to-table restaurant that has locations in both Newark and Maplewood, New Jersey.
