New York City‘s Union Square has a fresh addition to its plant-based dining scene—Le Basque, an elegant restaurant from celebrated chef Guy Vaknin, known as the mastermind behind City Roots Hospitality. Vaknin’s latest venture artfully combines the rich culinary traditions of France and Spain, inspired by the flavors of the Basque region, making it a new must-visit for vegans and foodies alike. The restaurant opens to the public on November 15, 2024.
A New Chapter in Plant-Based Cuisine
Following the success of Beyond Sushi, Willow, Coletta, Anixi, and Sentir, Vaknin takes his culinary expertise further with Le Basque. The menu promises an immersive journey through Europe’s vibrant flavors with a creative twist on classic dishes. Signature dishes include Faux Gras made from smoked lentils with sage-infused butter and Port Beef Bourguignon crafted from port-braised beef substitutes, heirloom carrots, and pearl onions. Diners can also savor Escargot, created from wood ear mushrooms, and a decadent Basque Burnt Cheesecake, topped with wildberry lavender jam.

Le Basque’s bar offers a curated selection of wines from France and Spain, alongside cocktails that elevate the dining experience.
