Eat Just (maker of JUST Egg) has announced they will be releasing vegan egg breakfast bites this spring (think mini, bite-sized vegan quiches!). Just Egg Sous Vide—cooked in the traditional sous vide way by vacuum sealing the food, submerging it in water, and preparing it at a precise temperature—will come in four internationally inspired flavors.

“Inspired by America” will be filled with potatoes, dill, and red peppers, while “Inspired by India” will be flavored with yellow curry, broccoli, and roasted cauliflower. “Inspired by Japan” will be stuffed with mushrooms, toasted sesame seeds, and furikake seasonings. And “Inspired by Mexico” will be filled with the zest and spice of lime, roasted peppers, chipotle chili, beans, and corn.

The egg bites will be launching at select grocery stores in March. They can be found in the freezer section, and each box will contain four plant-based bites that can be enjoyed after cooking in an oven, toaster oven, or microwave.
