Chicago’s First Vegan Ice Cream Shop to Open This Spring

Vaca’s Creamery—the first all-vegan ice cream shop in Chicago—is set to open this spring. The establishment is inspired by the popular Sweet Ritual in Austin and a love for vegan ice cream.

Vaca’s Creamery—the first all-vegan ice cream shop in Chicago—is set to open this spring. The establishment is inspired by the popular Sweet Ritual in Austin and a love for vegan ice cream.

The founders, Dylan Sutcliff and Mariana Marinho, moved to Chicago in early 2020 and created All Tomorrow’s Pastries (a micro-bakery based out of their home) in hopes to open an ice cream shop down the road. “[All Tomorrow’s Pastries] was always a short-term business as we wanted to get to know the Chicago vegan scene and build interest in our business, but the response from Chicago vegans was amazing. We quickly hit our baking capacity in our tiny apartment and sold hundreds of cakes. During this time, we searched for storefronts for Vaca’s Creamery and prepared for our eventual transition. We eventually had to close orders in December to focus on Vaca’s as the demand was too much,” Mariana told VegOut.

Vaca’s Creamery will be located at 1436 W Blackhawk St, Chicago, IL 60642, and is set to open in April of this year. The menu will consist of creamy soft serve, shakes, sundaes, and waffle cones—all vegan and ethically sourced.
