The elegant and perfectly sweet confections aren’t traditionally vegan but thanks to the innovations from companies like Verón, herbivores can enjoy plant-based versions of the iconic treats. After a year of brightening customers’ days through cookie deliveries, female-owned Verón is opening a vegan macaron shop Downtown Los Angeles.

Shera Fournier of Verón is a passionate animal rights advocate and sweets connoisseur who dreamed of bringing the exciting and satisfying experience of eating French macarons to vegans in the US. Fournier spent hours upon hours in the kitchen to refine her macaron recipe—and once it reached perfection, Verón was born.

What’s in a Vegan Macaron?

Most French macarons are made with egg whites, and they’re very difficult to make—vegan or not. Fournier has found a way to use a vegetable starch-based egg replacement to achieve the same quality, taste, and texture of a classic macaron, with a better impact on our bodies and the environment. What’s in a vegan macaron? At Verón, they’re made from real, whole-food ingredients without any artificial colors, flavors, palm oil, corn syrup, dairy, eggs, or gluten.

Verón Will Open Its First Brick-And-Mortar Location in Downtown Los Angeles

Upon its launch in September of last year, Verón has risen in popularity among vegan and non-vegans. The company has sold over 50,000 macarons and shipped orders to every state in the country. But wouldn’t it be great to walk into a cute and trendy pâtisserie to pick out, mix-n-match, and enjoy these delicious confections in person? YES!

Later this year, Verón will open its first brick-and-mortar location in Downtown Los Angeles at 601 S Los Angeles St, Los Angeles, CA 90014. The shop will feature at least 18 macaron flavors alongside a variety of specialty items and a full coffee program. Fournier expressed plans to open the storefront just in time for the holidays—so it will be the perfect destination for purchasing Christmas presents!

Verón’s Vegan and Gluten-Free Macaron Flavors

While we don’t know all the menu details just yet, we do know Verón will stock their most popular vegan and gluten-free macaron flavors as well as seasonal varieties. Blueberry, Earl Grey, Guava, Lavender, Matcha, Mocha, Pistachio, and Rose are a few flavors we hope to pick up at Verón’s flagship store.
