This new vegan Italian concept offers homemade breads, pasta, wine, and more!

A new vegan restaurant and wine bar is serving classic Italian cuisine in NYC. Founded by celebrity chef and entrepreneur Guy Vaknin, City Roots Hospitality has opened Coletta in Manhattan’s North Gramercy neighborhood and plans to bring a fresh culinary perspective to Italian cuisine.

“Coletta gives me the stage to face the challenge of creating fine vegan and kosher food that’s also accessible,” Vaknin told VegOut. Many techniques and ingredients are rooted in very old traditions, and challenging those traditions is a risk worth taking. Having the chance to recreate these wonderful classic dishes and veganizing them is incredibly rewarding. The goal in designing this menu is to show that anything is possible in the kitchen, and plant-based cuisine is a prolific opportunity rather than a restriction.”

From the Hospitality Group Behind Beyond Sushi and Willow

City Roots Hospitality is the group behind NYC’s popular vegan sushi spot Beyond Sushi and the American bistro concept Willow. With the opening of Coletta, City Roots aims to offer an inviting, memorable dining experience for all and to combine Chef Vaknin’s culinary skills with locally sourced vegan ingredients.

Guests who dine inside Coletta will experience a space designed by Studio RB, which features intimate dining areas and wood banquets alongside a hand-painted backdrop by New York City-based artist Lia Ali. The restaurant also offers semi-private dining for special events, as well as full-space rentals.

Coletta’s Homemade Breads, Pastas, and Brick Oven Pizzas

Coletta’s menu is fully vegan and kosher and offers many gluten-free options, such as homemade breads, pastas, brick-oven pizzas, and desserts. Signature cocktails, house-infused liquors, and local beers are also available, as well as an extensive wine list to pair with the food. The restaurant’s signature dishes include tuna crudo, sunchoke risotto, squid ravioli, and potato ricotta gnocchi, all of which are made with plant-based ingredients.

Coletta is located at 365 3rd Avenue, New York, New York 10016. The restaurant serves both lunch and dinner seven nights a week and is now open Sunday-Thursday 11:30am-9:30pm and Friday-Saturday 11:30am-10:30pm.
