Impossible Foods—the plant-based food tech company behind the Impossible Burger—is making strides toward its promise to eradicate animal-based food products by 2035 by tackling dairy. The start-up has already developed a prototype that is said to mimic cow’s milk unlike any other plant-based derivative on the market. Coined “Impossible Milk,” this emerging product is meant to replicate cow’s milk in terms of taste, texture, and functionality—that means it won’t curdle when added to hot liquids like coffee.
The emerging Impossible Milk is just one of the many new products Impossible Foods has in the works. The company has raised $700 million in 2020 in order to double its research and development team within the next year. The enhanced team will be responsible for creating Impossible versions of seafood, chicken, steak, and more.
The market release of Impossible Milk has yet to be determined, but Impossible beef patties, beef grounds, and sausages can be found in thousands of grocers and restaurants nationwide.
