Portland’s New Filipino Pop-Up Is Serving Vegan Ensaymadas

Calling all Portland vegans! There’s a new pop-up in town. Kumare PDX has only been open for a few weeks, but they’re already making a splash in the Portland vegan food scene. Owned and founded by Filipino sisters Ada and Carla Chavez, Kumare PDX specializes in Ensaymadas, which are soft and sweet dough pastries that are a staple in Filipino cuisine.

Calling all Portland vegans! There’s a new pop-up in town. Kumare PDX has only been open for a few weeks, but they’re already making a splash in the Portland vegan food scene. Owned and founded by Filipino sisters Ada and Carla Chavez, Kumare PDX specializes in Ensaymadas, which are soft and sweet dough pastries that are a staple in Filipino cuisine.

Kumare currently offers four flavors. The Classic—the most traditional of the bunch and the recipe that inspired the duo to create a veganized version—is topped with buttercream and shredded cheese. The Dulce De Leche is slathered with vanilla buttercream and drizzled with caramel. The Jackfruit contains a ripe jackfruit jam (yes, jackfruit can be sweet too!) in addition to the vanilla buttercream. And the Ube gives you a triple dose of the purple yam with ube buttercream, ube crumble, and ube halaya.

The pop-up is currently taking preorders only, with scheduled pickups to ensure safe and efficient customer interactions. The Ensaymada box comes with one of each flavor for $25. Check them out on Instagram at @kumarepdx to see where they’re popping up next.
