New Tropical Vegan Food Cart Opening in Portland This March

Shark’s Cove—a Hawaiian-themed food cart—is joining the new CORE (Collective Oregon Eatery) cart pod and food hall this March. CORE houses seventeen food carts and trucks and boasts an expansive indoor dining hall complete with a bar that serves drinks inspired by each of the food carts.

Shark’s Cove—a Hawaiian-themed food cart—is joining the new CORE (Collective Oregon Eatery) cart pod and food hall this March. CORE houses seventeen food carts and trucks and boasts an expansive indoor dining hall complete with a bar that serves drinks inspired by each of the food carts.

Shark’s Cove joins the pod from an educational standpoint. Owner Kayla Lamberson has an extensive background in activism and marine conservation and is hoping to bring awareness to the negative impacts that factory farming and commercial fishing have on our environment. Shark’s Cove will post conservation information on their social media channels, and has plans to donate to ocean nonprofits via fundraisers and specials.

The cart will be serving up jackfruit nachos, burgers with pineapple and teriyaki, banana and macadamia pancakes, and teriyaki tempeh mango bowls. Lamberson is even working on a vegan loco moco with a house-made gravy and house-made “fried egg.”
