New Health-Conscious Vegan Cafe Opens Tomorrow in Jacksonville, FL
From Thai curry to good old-fashioned burgers, Jacksonville’s newest cafe has something for every palate!
This week, Vegan Cafe Jax will make its debut opening in Jacksonville, FL. The all-vegan eatery is the result of the collaboration between Dr. Rene Pulido, MD and Chef Matthew Bardroff. The doctor and chef duo came together through their mutual belief that making nutritious, plant-based food options available is crucial in helping to improve the overall health of the community.
“The unfortunate reality is that it is not in the pharmaceutical industry’s best interest to correct or treat the underlying cause of disease, which 99% of the time is diet and activity related. I am tired of pushing pills. It’s about time I start offering a treatment that is actually curative, restorative, and not associated with horrible risky complications. It is for this reason that I have partnered with Chef Mat Bardroff to open Jacksonville’s premier delicious health-conscious vegan restaurant,” Dr. Pulido told VegOut.
The cafe will offer globally inspired dishes like the Mediterranean Rainbow Quinoa (chilled quinoa salad, marinated tomatoes, almond feta, Kalamata olive relish, pickled celery, red cabbage, cucumbers, bell peppers, pickled cauliflower, and fresh greens) and Thai Sweet & Sour Curry (jasmine rice, coconut curry broth, confit tofu, pineapples, bell peppers, peanut crumble, scallions, and cilantro), as well as burgers, wraps, soups, and mac ‘n’ cheese. Early risers will also be able to choose from the breakfast menu (breakfast is served until 11am), which features classic bites like avocado toast, waffles, and a tofu scramble sandwich. In addition, the eatery will also serve a rotating selection of cookies, pies, cakes, and cupcakes.
“I am thrilled to present to you the vibrant flavors of fruits and vegetables, combined with wholesome grains simmered in your favorite sauces, allowing your taste buds to experience a unique and savory sensation with every bite,” Chef Bardroff told VegOut.
