Ike’s Launches Limited-Edition Vegan Sandwich for Earth Day, Encouraging People to Try Vegan
This Earth Day, Ike’s Love & Sandwiches is introducing a limited-edition vegan sandwich, called the “Earth Angel.” The handheld will be available April 22 (Earth Day) through April 29 at participating locations.
Created by Ike’s founder (and sandwich wizard) Ike Shehadeh, the vegan as-is sandwich features Tofurky slices, mushrooms, vegan mozzarella, and Ike’s special cabbage slaw slathered in Dirty Sauce on Dutch Crunch bread. It’s priced at $10 and a portion of the proceeds will be donated to PETA in support of their “Eat Vegan for the Earth Day” campaign.
“At Ike’s, we love sandwiches, and we love our environment. The best way to celebrate Earth Day is to try vegan, and we make it easy and irresistibly delicious,” said Renae Scott, CMO at Ike’s. “The Earth Angel will be a hit for everyone, so come try it before it’s gone! At Ike’s, our innovative menu also has many other vegan sandwiches.”

Tofu Tikkā Recipe
Tikkā is a northern Indian dish involving marinated protein or vegetables cooked in a tandoor, or clay oven. My version is made with marinated tofu baked on skewers in a conventional oven to mimic the traditional cooking vessel, which adds a char and smokiness to the dish. Using smoked paprika further pays tribute to the traditional cooking technique. This tikkā is best served hot with cooling mint chutneys and is delicious in lettuce wraps as well. For lettuce wraps, dice the tofu and vegetables into smaller pieces after cooking and fill the lettuce leaves just before serving.
