If you often find yourself saying, “I love Chipotle. Chipotle is my life!”, then you’re about to lose your mind! Why? The vegan-friendly fast casual restaurant just rolled out a new menu item, cilantro-lime cauliflower rice.

The announcement came earlier this week. "Chipotle fans have been craving more plant-powered, better-for-you options that align with the latest health trends and emphasize the benefits of real food," said Chris Brandt, chief marketing officer. "That's why we are thrilled to offer cauliflower rice nationally and help our fans achieve their diet or lifestyle goals."
The grain substitute is made with freshly grilled riced cauliflower, fresh cilantro, lime, and salt. It has a similar taste to their iconic cilantro-lime rice, but this time, it’s made from the popular cruciferous vegetable. Not only that, but this new “rice” is 100% vegan and keto-friendly, with just four grams of net carbs per serving!
Chipotle’s cilantro-lime cauliflower rice is available for a limited time only and costs an additional $2. We’d recommend trying it in their Vegan Bowl which comes with the new cauliflower rice alongside black beans, sofritas (tofu), fresh tomato salsa, roasted chili-corn salsa, and romaine lettuce. Oh, and extra guac if you’re feeling fancy!
