This month, Aratham Gourmet to Go (a new vegan grab-and-go spot) opened in Troy, Michigan, offering organic, plant-based breakfast, lunch, and early dinner options, as well as affordable grab-and-go deli food by the pound or in meal-size portions. In addition, the shop also offers market items like cold-pressed juice, grains, spices, produce, supplements, local products, and locally crafted natural personal care items. Aratham prioritizes being a zero-waste business and uses biodegradable packaging in all of their products.

Artham’s Signature Vegan Plates

Aratham’s signature vegan plates include quinoa “crab” cakes (chickpeas, hearts of palm, nori seaweed, lemon, celery, zucchini, roasted red peppers, kale, dill, nutritional yeast, and house-made vegan tartar sauce), “lobster” po’boys, cauliflower sandwiches, vegan spaghetti Bolognese, and Reuben sandwiches with house-made vegan “corned beef” made with jackfruit or seitan. In addition, diners can opt to have the meals delivered to their home or office, and can also choose from organic, cold-pressed, raw juices, and a dessert of the week—think chocolate peanut butter cheesecake.

The Team Behind the Business

Gabriel and Tiffanie Vera are the team behind Aratham. Prior to opening Aratham, Gabriel served as Director of Food and Beverage and Executive Chef at MGM Grand, Joe Vicari Restaurant Group, Mission Point Resort, Hilton and Hyatt hotels, Lena & Habana, Four Diamond Restaurants, and more. The husband-and-wife duo began their business as a meal delivery service, serving ready-to-eat, affordable vegan meals to the community in the Detroit area. The Veras plan to continue offering their meal delivery service at Aratham, which includes a rotating weekly menu of items like wild rice mushroom soup, turmeric tahini bowls, Chinese fried rice, Korean lettuce wraps, sausage and pepper subs, and chocolate chip banana bread for dessert.
