La Kai Bakery is a vegan micro-bakery in Chicago that caters to food allergies. Founders Theresa and Micheal were inspired to create vegan allergy-friendly treats after discovering their children were allergic to eggs and tree nuts. The couple advocates for the food allergy community and specializes in vegan gluten-free desserts including VegOut favorites, the Lani Cookie (dark chocolate, Dandies marshmallows, and UnReal gems) and Almond Chocolate Chip Cookies. Celebrity chef and restaurateur Matthew Kenney just launched PlantMade—a highly anticipated ready-made vegan food line. The frozen entrées are now available on Amazon for $42.50 for a five-meal pack. The completely gluten-free line includes Chickpea Curry, Jackfruit Enchiladas, Crab-less Cakes, Korean Meat-less Balls, and Buffalo Cauliflower Bites. According to posts on Instagram, Jackfruit Carnitas and Mac & Cheeze are also in the works.
