My birthday was a few weeks ago, but the results of overindulgence in vegan lasagna, beer, and cheesecake from that weekend remain. Johnny Appleseed Juice: I love green juice, and consider myself a juice snob. Veestro’s Johnny Appleseed tasted straight out of a blender.
Enchilada Casserole: As I heated my casserole, I was convinced I had walked by a legit Mexican restaurant. The aroma was amazing.
Mushroom Risotto: The rice and veggies were both perfectly cooked. The dish was accompanied by flavorful sides of carrots and kald.
Kale and Quinoa Salad: A beautiful presentation of kale, sweet cranberries, tahini, and nutritional yeast.
What I enjoyed most about Veestro’s products was the fact that you can taste the attention paid to the dishes through the use of quality ingredients. Each meal contained the right amount of seasoning, plenty of sauce, and ample toppings. Packaging was simple with clear instructions.

Tofu Tikkā Recipe
Tikkā is a northern Indian dish involving marinated protein or vegetables cooked in a tandoor, or clay oven. My version is made with marinated tofu baked on skewers in a conventional oven to mimic the traditional cooking vessel, which adds a char and smokiness to the dish. Using smoked paprika further pays tribute to the traditional cooking technique. This tikkā is best served hot with cooling mint chutneys and is delicious in lettuce wraps as well. For lettuce wraps, dice the tofu and vegetables into smaller pieces after cooking and fill the lettuce leaves just before serving.
