Chipotle Introduces New Plant-Powered Lifestyle Bowls
Chipotle has recently introduced new “Plant-Powered” options to their line of Lifestyle Bowls. At the beginning of this year, they created a separate menu of “Lifestyle Bowls,” catering to a few different types of diets out there, and now the lineup includes a vegan and vegetarian (which can easily be altered to be made vegan) option as well.
Their vegan “Go Sofritas” bowl includes brown rice, black beans, sofritas (their soy-based, vegan protein option that is 100% organic, non-gmo, gluten-free), tomato salsa, corn salsa, and lettuce. The easy-to-alter non-vegan “Go Vegetarian” bowl includes brown rice, pinto beans, fajita veggies, tomato salsa, corn salsa, sour cream, and guacamole. Simply request no sour cream for it to be vegan.
While Chipotle already had plenty of vegan options available—build-your-own salad, bowl, burrito, etc.—these new bowls are quick and easy shortcuts to simplify the ordering process.

Tofu Tikkā Recipe
Tikkā is a northern Indian dish involving marinated protein or vegetables cooked in a tandoor, or clay oven. My version is made with marinated tofu baked on skewers in a conventional oven to mimic the traditional cooking vessel, which adds a char and smokiness to the dish. Using smoked paprika further pays tribute to the traditional cooking technique. This tikkā is best served hot with cooling mint chutneys and is delicious in lettuce wraps as well. For lettuce wraps, dice the tofu and vegetables into smaller pieces after cooking and fill the lettuce leaves just before serving.
